Are more people actually psyche cases or are we engaged in another form of societal mass hysteria? Or, is Big Pharma successfully persuading us (women, mostly) that we're all nuts?

Sorry, no. It's good and bad both.
Some stuff is definitely over-prescribed, but this isn't Shutter Island. Many, many people have benefitted greatly from these drugs. They've been able to keep family relationships, hold down jobs and not kill themselves.
The rampant over-prescribing we can fix. Other problems, the drugs seriously help with.

I also think that if societal roles were a bit more defined, people wouldn't be as wonky, either.
Lastly, religion can be a powerful influence for piece of mind. A little Jesus would do a lot of people a lot of good.

Yeah that'll totally keep the schizophrenics from cutting nonexistent transmitters out of their necks.
I'm just saying those kinds of people exist. And there are more of them than we thought and they should be on something because it'll seriously help.
I also don't think they're the majority, and yes, drugs are way over-prescribed. Your solutions are good, so here are some other ones you didn't mention: Traditional Eastern Medicine.
That's right I fucking said it.
I'm not talking about woo. A lot of Eastern Medicine focuses on mild to moderate solutions rather than the more serious stuff like surgery or synthetic drugs.
Drinking tea regularly—the proper stuff, gung fu brewing, the whole bullshit—brought my blood pressure down to 120/80, helps me sleep, and helps me with work because it's a massive caffeine+theanine hit. (Still helps me sleep a great deal. No idea why.) Gaba oolong has been shown in early studies to help kids with autism regulate their mood—so much so the parents in the study kept making it for their kids even after the study concluded. I tried it myself. Works.
Meditation works, too. And no, I don't mean woo there, either. When you practice any kind of Qi Gong stance, all you're doing is learning how to straighten out and expand your spinal cord like you do asleep, but while standing up. Doing this requires you to keep trying to do two seemingly contradictory things at once: focus on getting the stance right to expand your spine, and relax.
There are two outcomes to this: physically, it feels great after about 20 minutes. Mentally, you've been more present in those 20 minutes than any other part of the day because your damn phone was put away and you're noticing and responding instead of thinking. (Bike riding through city traffic is very similar.) You're right here, right now as Jesus Jones sang about.
It's not a pill but it helps in a very noticeable way.

As for tea brewing...Tea has medicinal properties, and the art and ritual of Eastern culture tea has a slow-down effect of its own.
You're never going to manage the hard-core psychos. Transmitters in the neck is mild, wait until you meet a gal that likes to bite off penises for kicks.
But most of the people taking all the psychotropic drugs simply do not need them. Many of those that do, would function better in controlled environments.

Well, the kind of meditation I'm talking about is sorta spiritual in the "birds & trees" sense, but it's mostly mental/physical and not really religious. Gotta go somewhere else for that.

Kinda makes you think twice about "don't talk to me until I've had my coffee." Maybe let people have their freaking rituals already. We've already done away with most of the others, which was a mistake.

Sadly, that's what better diagnoses should've led to. Understanding what you have going on should lead to understanding what you need to do to keep things on the rails. But nope, for many docs and patients "understanding" means knowing which pills to be on. Better living through chemistry or bust.
