Explain this - Scanner Question

So I have an HP Scanner at work that has several options including Scan to Computer and Scan to Email. I have always used the Scan to Computer option. The Scan to Computer option wasn't working for some reason last week, so I had to use the Scan to Email. The scans wound up being of a much higher quality than the scan to computer... Better resolution, no graininess... Why would that be?
