Tailgating?

So we’re tailgating for next week’s CNU game. I’ve never done this before so I need some suggestions.
Anybody have some suggestions for quick and easy tailgate foods that will make us the envy of the CNU Parental Community?

How long does it take to prepare? We have a 3 hour drive, need to check into the hotel, then get to the tailgate spot by 2. Game starts at 7. I’ve not had good experiences taking loaded crockpots on short drives, let alone 3 hour trips, so we will need to prepare it on site with a small grill/camp stove… We can prep some stuff in advance, but…

LSU tailgating is an experience, and it's often said there are as many people outside of the stadium as inside, even though the stadium holds 102,000. I think that's hyperbole. Probably not more than 50,000 outside.
As such, the open tailgates tend to cook food in pretty big quantities, like washpot quantity. They cook things like jambalaya, pastalaya, gumbo, chili, maybe a fish courtbullion. Guys that are cooking for smaller tailgates do a lot of grilled and smoked stuff, like oysters, shrimp, pulled pork, ribs, sliders, steaks, kabobs, chicken leg quarters, etc. Usually with side dishes they like...baked beans, cole slaw, pasta salad, etc.I
And there are always the ubiquitous burgers and dogs.
Some folks cook some fancy things like Mik or even pick catered food up on the way to the stadium.
I think it all boils down to what you like and what isn't superhard to prepare.
