Here it's Beef Wellington, green beans with almonds and smoked blue cheese.

I did. Any time a pro chef tells you something takes x minutes, double it. At least. But I'm doing the classic construction. I've done it before.

I threw a piece of hog on the pit this morning. Trying a combination of pin oak and green mayhaw.

Y'know, there are hazards to cooking with wine. Especially when it goes in you AND the food. I didn't turn the Wellington seam side down.
Oh well. I looked in the oven and it looks fine.
I have made worse blunders.

Can you eat hawthorn fruit? Mayhaw fruit is used for cobblers, syrup, wine and most importantly, jelly. $8-$10/gallon is the going price for the fruit.
