    It's rare that Mrs. George speaks about my cooking in a negative way.

    She had expressed some interest in stuffed peppers, so I made this recipe:

    Ingredients:

    6 green bell peppers
    salt to taste
    1 pound ground beef
    1/3 cup chopped onion
    salt and pepper to taste
    1 (14.5 ounce) can whole peeled tomatoes, chopped
    1 teaspoon Worcestershire sauce
    1/2 cup uncooked rice
    1/2 cup water
    1 cup shredded Cheddar cheese
    2 (10.75 ounce) cans condensed tomato soup
    water as needed

    Directions:

    Bring a large pot of salted water to a boil. Cut the tops off the peppers, and remove the seeds. Cook peppers in boiling water for 5 minutes; drain. Sprinkle salt inside each pepper, and set aside.

    In a large skillet, saute beef and onions for 5 minutes, or until beef is browned. Drain off excess fat, and season with salt and pepper. Stir in the tomatoes, rice, 1/2 cup water and Worcestershire sauce. Cover, and simmer for 15 minutes, or until rice is tender. Remove from heat, and stir in the cheese.

    Preheat the oven to 350 degrees F. (175 degrees C). Stuff each pepper with the beef and rice mixture, and place peppers open side up in a baking dish. In a medium bowl, combine tomato soup with just enough water to make the soup a gravy consistency. Pour over the peppers.

    Bake covered for 25 to 35 minutes, until heated through and cheese is melted and bubbly.

    My mods - I used 2 green and 2 red peppers. I didn't put the cheese into the mix, rather, I sprinkled on top of the peppers and then let it get bubbly - Mrs. George didn't want cheese (I know, I know).

    Only needed 1 can of tomato soup for good coverage.

    Impression - really bland. Could have used a LOT more salt and pepper, and more Worcestershire as well.

    For me, it was a 2 ½ star (out of 5) recipe - 1 being inedible. Mrs. George didn't like the rice (?), and when it was cooking she smelled burning plastic.

    Life is too short to waste with mediocre recipes.

      1. I wouldn’t have boiled the peppers before. If you do, boil them two minutes at best.

      2. The canned tomatoes? No, use a marinara…

      3. If the wife doesn’t like rice, try substituting diced peppers. Karla did that a few weeks ago and it turned out really well.

      A very quick and easy fix for all of this? Costco has an excellent fresh pre-prepared stuffed pepper tray that you just pop the plastic top off and put in a pre-heated oven for 20 minutes…

          We stuff bell peppers, using rice or cornbread dressings. We also stuff banana peppers. And have been known to make armadillo eggs.

            Armadillo eggs rock. But I don't consider that a stuffed pepper.
