Just spitballing here...
I love pesto. Would it work on some spuds?
If so, what kind?

I bought some pre-made pesto from Amazon - I imagine it would work.
I make "smashed spuds" frequently, so this might be a nice addition/change.

I like making a big mess of something and having it around for leftovers for a day or two. That site has a handful of decent ones that aren't too fancy or involved.

Yum. I may try that. I just discovered the first signs of downy mildew on yet another of my basil plants (we haven't seen the sun in days), and I need to harvest it now.
I made a batch the other day for a soup recipe.

Pesto works well with gnocchi. That's potato-ish.
I like my spuds roasty or crispy, but pesto is best the fresher and less cooked it is (my take). That'd be the biggest issue for me.
In Aqua's link it's spooned on afterwards. That makes sense.

I see no reason it would not. Potatoes(good and neutral) + pesto(good and distinctive) = good.
