Nah, too itsy-bitsy. Takes forever, frets me to death.
If I ever get back into cooking mode, I probably won't mind it as much. But now it's too much like work -- repetitive, boring work.
I like prep stuff. It's a necessary part of cooking and it has at least as much impact on the final outcome as the actual cooking—a lot of times more so. So I don't consider it mindless or boring, it matters to get it right. So each time is an opportunity to learn more and get better.
Besides, peeled garlic gets dull as hell so you have a far better result peeling it yourself.

Yeah, because...you value your ability to use a knife? If skilz are what you're talking about, that's fine.
I'm talking about results and ease.
I've diced hundreds of onions, and this was, by far, the easiest way to do it.
I do five pounds of onions, a half pack of celery and 3-4 bell peppers at one time, not changing out screens. I'm not shabby with a knife, but I don't think I could keep up.

We have one of those (different brand). Very easy, though we only use it when we need to chop a lot of vegetables. Only word of caution: check the plastic after use for damage. On occasion, little bits of plastic got chipped off by the knife and ended up in our food...

When we bought the condo, the only thing that was fixed was the walls.
Here's the floorpan. Ignore all the dotted lines (tray ceilings) and the "bar."
Here's the kitchen as they planned it - remember, there was nothing there in the space:
What we did is put the 42" refrigerator in the center of the wall, and add a peninsula and cabinets.
