So I get to fix stuff my beloved bride would not care for. Tonight it's crispy duck legs with sweet potatoes roasted in duck fat. Lots of fresh thyme from my outside herb garden.

    Yum. I love duck.

Wild duck can be a little strong. Merganzers, especially, can be a bit fishy...

Duck is wonderful. Hubby and I love it. Nice way to use the rendered fat with the sweet potatoes. 👍
