It sorta makes sense.
In Spanish (at least in Mexico) avocado is “aguacate’. I’m guessing ‘guaca’ is the Aztec word for testicle. And we know ‘mole’ is a type of sauce in Mexico, so it make sense that ‘mole’ would be Aztec for ‘sauce’.
Thus ‘guaca’ + ‘mole’. Testicle sauce.

@jon-nyc Humanity did not need the etymology, but having invented it, we were always going to build an entire cuisine around testicle sauce and call it brunch.
