    I will confess I am a carbonara purist - guanciale, pecorino romano, pasta, egg yolks and pepper are the only things that should be in a real carbonara. But this is a bit ridiculous.

        The guanciale is a must. "Bacon" makes it something else, not bad in a pinch--but not the same thing. I do one additional egg with the white added just to be healthy.

        But you can't buy this in a jar from some factory from Belgium. So yea.
