Small factoid...
Starting about a decade ago, egg demand has gone up a lot. Some fast food places say the increase has been as much as 400%. More people are eating breakfast, especially during and after COVID. Maybe it's habit, maybe it's more work from home folks. And since the price of meat increased, maybe some people are replacing meat protein with egg protein.
Regardless, a lot more demand.
And we've had a lot of avian flu of late. Standard procedure for broilers and layers is kill, disinfect and restock
Broilers bounce back much faster than layers. Takes about 20 weeks before you start to see pullet eggs and the first ones are puny.

Eggs have always been a supermarket cheat code for delicious nutritious and cheap food. Less so now but still a great price to food quality ratio.
