Reminds me of shark. Doesn't have a lot of taste, so it tends to take on the flavoring of the spices used.
Tail is the best meat, but you can use the jowels and the legs.
Gator fat is horribly bitter and to be avoided.

Had gator tail meat in corn dusted, fried nugget from.
Tasted like chicken nugget, slightly more chewy.
