The BBQ place that does the specials, such as the rueben I've recently enjoyed, is doing bone marrow today. I had to pre-order a few days ago, because they only like to make what they can sell. I once heard a famous chef say that bone marrow is his idea of the best dish on earth. God hid the best food on earth inside the bones of the dumbest animal. Classic God.
They started "soaking" them yesterday, which I assume is a brine:

sort of a fat bomb in your mouth. Not sure I enjoyed it very much. The capers and green stuff (watercress?) that went with it on the bread were good.

That’s odd. I don’t like fat. I skip ribeyes because I don’t care for that much marbling… But I do love marrow..:
