It's not that the referees are less reliable in the NFL, it's that the rules are more susceptible to arbitrary judgment based on split second flashes in a play. And when those rules are applied, the consequences can be blatantly game changing. Then the offenses plan for it and try to create situations where such a judgment call might work to their favor, while they have nothing to lose if it doesn't.
