How strictly do Sikhs observe this?
It gets nuanced. Sikhs are supposed to try and minimize cruelty when they slaughter animals. So ideally they hunt/raise and kill their own meat - or get their meat from very high quality sources. Not practical for 99% of people, so many stick to vegetarianism.
The Venn diagram of Sikhs who really care about the ethics of their diet and would trust a fast-food chain to have high standards is not gonna be big.

Now, here's where it gets interesting... Shoot a deer with a bow. It's not ritualistic, but the deer usually dies from blood in the lungs or sometimes exsanguination.
If the deer dies from blood loss caused by razor sharp broad head blades, is that different than cutting the animal's throat?
