July 4th - what are your favorite summer foods?

Mine tend toward vegetables and simple grilled stuff. Just made a batch of cucumber-tomato salad. Love that stuff.
Corn on the cob, tomato sandwiches on sourdough toast, grilled summer squash and zucchini, grilled little gem lettuce with blue cheese.
Grilled shrimp and panzanella.
Fruit cobblers, strawberries in balsamic vinegar and orange...

I love cucumber and tomato salad… I am about corn on the cobbed out… We had company yesterday, so I made my new fajitas. That’s becoming a favorite, though I have to get the family trained on how to eat them… The homemade guac and pico are also becoming summer favorites. I wouldn’t mind working on a blackened corn salsa as well.
Watermelon… I am particularly becoming a fan of watermelon, feta, mint salad
