Pork chop color question
-
The pork chops I just picked up from the grocery were nice and pink as you would like. When I opened the package, wherever the chops had been touching the meat was gray. It's not something I've ever seen. No smell, but something caused that and it wouldn't be oxidation.
Any ideas?

Stop being a racist pig and eat your pork chops of color.

I believe they pack pork and beef with carbon monoxide to keep it looking pink. If you shop in some parts of Europe the meat looks grey because they don't do this. Maybe something happened when it touched?
