I've used Bear Creek's "Darn Good Chili" mix a couple of times and I've been pretty pleased. I discovered it a couple of years ago, and I bought some individual packets.

I've made the family size several times, using the variations listed on the back of the package. Here's the most recent I made:

Comes out pretty good. It's a little different from traditional chili, but still, ahem, darn good.

Here's the question. I have some ground beef and mild italian sausage frozen (I used part of it for lasagne a while ago, and SWMBO prefers it without the sausage).

Would using that mix work in chili? I mean, after all, chili is basically "throw it all together and lets see what happens, right?

The saying, "Lite is just one damn thing after another," is a gross understatement. The damn things overlap.

Sure. A lot of chili recipes call for sausage. I don't think the Italian seasonings would hurt a thing.
