My wife accidentally thawed three pounds of Andouille I had in the freezer....26AB5C21-5671-454D-BEE9-B9143596302D.jpeg

Nothing quite so wonderful. It's been a busy day...I was in the garden pulling up butter bean plants this morning, when the wife decided to take a fall on the carport. Thank goodness, nothing but bruises and a scratch or two, but I've had to keep an eye on her today, while picking peas and scavenging butter beans.

So between shelling and getting a few other things done, it was 1700 before I even thought about supper. So I grabbed a pound of chuck and just cobbled up some sloppy joes.

Needs must when the Devil drives, you know...

Well, any suggestions for the rest of this andouille? Used up one pound, but still have a bunch left...

Is that a red jambalaya in the pot? If so, a nice chicken and andouille gumbo freezes well.

Oh, it's just because she couldn't feel her feet very well, but that will get taken care of in a couple of weeks. Neurosurgeon will do a little reaming and shaving, and things should be much better.

@Jolly Yes, it wasn’t quite done when I sent the pic, but it rounded out well. Halfway through I realized I had no Frank’s Red Hot and only Chipotle Tabasco, so I combined the Chipotle Tabasco with some Peri-Peri sauce. Turned out with some nice heat. Still missing File powder.

Plain old red beans and rice with andouille is a great pleasure.

Supper tonight was a smoked Boston butt (done with crabapple wood), field peas, bread & butter pickles and a cold pasta salad.
