I've never made "smashburgers", so I thought I'd give it a try today.
Had some 80/20 ground beef. Divided into ΒΌ lb portions and rolled them into a ball. I preheated a on-the-stovetop griddle, and added some butter. Face-down buns on the griddle.
Then, the ground beef...
Came out great. Mrs. George's was hockey-puck perfection, and mine were a bit more juicy. I was able to make a double-cheeseburger with my patties.
Onion, lettuce, tomato...wonderful.
A tip I saw on America's Test Kitchen - rather than using a spatula or other gadget to smash the burger, put some non-stick aluminum foil on the bottom of a saucepan (I used a skillet) and use that to smash the burger. It worked really well.
Oh, some crinkle-cut fries in the air fryer as a side.
Shoulda taken a photo.

You make them in a skillet, or what?
I hate it when the place gets smoky.

I make them on a cast iron griddle.

Yup. I keep thinking about an outdoor propane griddle, but I need to stay away from that sort of food.

A very close friend of 40 years - my best man - is here. Baby back ribs, my favorite cole slaw recipe and, of course, corn on the cob.
