Talking with a friend today about cooking. Somehow the topic turned to mashed potatoes, and how I'm a real philistine when it comes to mashed potatoes.
Sit down...I use instant.
She told me that she keeps instant mashed potatoes as a thickener for soups. Supposedly, that's what Jacques Pepin uses as well. Easier than cornstarch or flour slurries, and improves the taste.

@George-K I use instant too. I much prefer regular, but it’s just so easy, particularly when I’m cooking for ungrateful little sods

One way to thicken soup with potato is to dice or mash some potatoes and add them to the soup while it is cooking. The starch in the potatoes will help to thicken the broth. Alternatively, you could also make a slurry by mixing equal parts of cold water and flour and slowly adding it to the soup while stirring to thicken it.
