I made the Sucklebusters Texas chili that @Mik referenced a while ago. Came out pretty good.
Next time, I'm thinking I'll use some chunks of beef rather than the ground beef (chili grind) and sausage that the recipe calls for.
Beef chunks are good. Venison is, too.
And fer chrissakes, get the beans out of the chili! You want beans, cook beans. I cooked a pot of red beans and sausage today.
