If proteins with good nutritional profiles can be produced in an environmentally friendlier, more economically way, why not? I would love to try more insect based proteins.

In a blind taste-test, I'm not sure if I could identify which was the insect-cookie.
That said, I'm not sure I want to participate in that study, LOL.

I did eat some foods made from insects. They tasted ok. I wouldn't mind eating insects if the taste is good and the food is healthy. The disgust reaction is rather immature imo.

Agreed.
This sort of transitions into the "impossible burger" and its ilk. The idea is to make a piece of food taste like something that it's not. I've tasted them (and others like them), and they're OK. Not the same, but OK.
OTOH, your comment about disgust rings more than true. I wonder if anyone who is disgusted has ever been to a sloughter house? They probably think their strip steak comes from a factory that produces the steak on a styrofoam container, wrapped in plastic.
