    Friends coming tonight for dinner. Dry brined top sirloin strips, corn picked this morning and marinated tomato cucumber onion salad. Summer's best.

            It can be if it's not too heavy on the cheese.

              Had some of that for the first time in Houston last month. We liked it. It's just roasted corn, sliced off the cob, in a cup. The toppings make the dish, and they're your choice. The food truck we were at had a huge tub of butter and various spices.

              Education is extremely important.

                The page I found had these ingredients:

                1/2 cup (110g) finely crumbled Cotija or feta cheese, plus more for serving
                1/4 cup (60ml) mayonnaise
                1/4 cup (60ml) sour cream or Mexican crema
                1/4 cup finely chopped cilantro leaves and tender stems
                1/2 teaspoon ancho or guajillo chile powder, plus more for serving
                1 medium clove garlic, finely minced (about 1 teaspoon)
                4 ears shucked corn (see notes)
                1 lime, cut into wedges

                It seems like the coriander would make this dish.

                  As it does all dishes. For only four ears of corn, I'd cut back on both the mayo and the cheese. Too much mayo can make it a gloppy mess. I'd use actual crema if you can find it, which is getting easier these days. I have some in the fridge now.

                  The other thing I have found recently it that cooking any type of meat or fish in a little clarified butter (ghee) makes the end product better, and it doesn't burn.

                    It all sounds really good, but I'm holding out for grilled peaches and homemade ice cream for dessert...

                      @Jolly If I had my druthers I'd have nothing but homemade ice cream. Today's storebought ice cream is not like ice cream of yore. It seems like it has less cream and more milk, and skim milk at that -- or something. It's weak.

                      I think USDA used to regulate the amount of cream real ice cream had to have, and they have changed that. Maybe for economc reasons. But the difference is marked. It's not nearly as much fun to eat.
