Ignoring her comments about Christianity, the thought of somebody pulling out a freaking guitar on a flight and singing about Jesus is pretty horrendous.

Yep. I think it's obnoxious AF. But, I'd feel the same way if the guy had done "Stairway to Heaven," or "Highway to Hell."
And, speaking of AC/DC, I would have pulled out my phone and played the Celine Dion "Shook Me All Night Long" video. Just out of spite.

You would think that. Because you're a sane person and it IS obnoxious AF.
By the way, the rhetorical shortcut trying to be employed here is commonly referred to as the Jesus Juke: the more Jesus you inject into your argument, the more you think you've won. (Or, more simply, the first person to quote scripture wins the argument, but in their own head.)

All things considered, "Leaving on a Jet Plane" by John Denver or "Freebird" by Lynrd Skynrd are my least favourite choices.

As I said, singing badly is not good. Half-decent voice and adequate rhythm on a tuned guitar? Wouldn't bother me a bit, whether he was singing Ressurected, Take Me Home Country Roads or Highway to Hell.
I don't want to listen to you for the flight, but ten minutes would be a welcome diversion from a boring situation (I find flying to be boring, once in the air).
