Sounds great. For me today will be a prime NY Strip from a place called Porter Road, an online retailer. Probably won't order from them again, but this steak looks pretty good. Salt, bourbon smoked peppercorns, Traeger blackened Saskatchewan rub, MSG (don't knock it till you try it). Will be cooked in an air fryer, from room temperature. (Don't knock it till you try it.) I do still think mesquite lump grilling makes the best steak, but other than that I can make a good steak with or without cast iron, sous vide, oven, air fryer, etc.

Porter Road is supposed to be very good stuff.
I like MSG. I mean, that and mushrooms are mostly what umami powder is and I use that a lot. Including last night on some filets. I followed the Omaha Steaks recipe, and it was delicious.
