My Japanese acquaintances always refer themselves as Japanese. Chinese however do make a point of saying they are from Hong Kong or not. Koreans say they are Koreans and Vietnamese say they are Vietnamese. I don’t know anyone who refers themselves as Asian. I do not even think there is a category for Asian on Government forms. Here, you are either Canadian, Landed Immigrant (if so, place of birth is asked) or Indigenous ( First Nations, Inuit or Métis).

You don't say "I'm European." You say I'm German, French or Italian."
Most of Russia is in Asia, do Russian citizens qualify as "Asians?" Of course not.
If you want to define a race by characteristics, that's fine. There's lots of caucasians in Africa, Asia, etc.
