    I don't have one of those, but I have a Vidalia Chopper which is similar.

    Mine gets used for making The Trinity and freezing one gallon bags.

        Looks like it would be more work to clean that gadget than taking a knife to chop the onion. I guess it would only save time when chopping a very large amount of onions.

          I thought that as well. Cleaned up really easy with a quick rinse from the kitchen faucet.

                Me too! Prep's easy with a good knife and the ability to use it. (It also helped I spent years cutting absolute fucktons of stuff on morning shift, so now, what are 5 shallots?)

                Also much more versatile. Chopping, cubing, slicing veggies can be done to spec, whereas with a machine it'll always do it the same way.

                  I sometimes use fresh onions, but most often I use frozen onions, mirepoix and trinity.

                      Yep. Sometimes use those too. I also have frozen crushed garlic, basil, ginger.

                            I like prep stuff. It's a necessary part of cooking and it has at least as much impact on the final outcome as the actual cooking—a lot of times more so. So I don't consider it mindless or boring, it matters to get it right. So each time is an opportunity to learn more and get better.

                            Besides, peeled garlic gets dull as hell so you have a far better result peeling it yourself.

                              I prefer using a knife as well. We don't have endless space for gadgets.
