'Meatless Monday' originated in WW-I, along with 'wheatless Wednesday' and 'gasless Sunday'
Even the Wilson's observed them in the Whitehouse.
The modern vegetarian version of 'meatless Monday' was inspired by the WWI effort and founded by a guy back in the 80s.

Change the day to "Friday" and you're a Catholic.

I think Friday becoming pizza day at public schools was a concession to catholics. I think that happened in the 70s or earlier.
