The main reason is the variability in commute and security transit time at JFK. To build in enough buffer (especially since we pretty much always check bags) I usually end up getting there well in advance of the flight. Especially if it's an overnight flight to Europe, it's convenient to eat first so I can sleep as much of the flight as possible.
